Byington
Vineyard & Winery specializes in the creation of chardonnay
and red- Bordeaux-style wines. The 95-acre Byington estate,
located within the Santa Cruz Mountains appellation of California,
lies at an elevation of 2,000 feet. Their
chardonnay reflects the quality of cool-climate mountain vineyards,
complemented by the winemaker's talent for combining individual
grape components. The availability of diverse, small cool-climate
vineyard lots from the mountains between Monterey Bay and the
San Francisco Bay allow Byington's winemaker to create complexity
of aroma, flavor, and mouthfeel in the Santa Cruz Mountains
chardonnay. Different yeast strains, fermentation temperatures,
oak types, and toast levels provide a wide range of components
for the Sonoma County chardonnay. Balance is achieved in the
chardonnays through the "spice rack" approach, the
blending of varying elements to create a layered experience
in the nose and on the palate.
Distinguished by complexity and rustic elegance, Byington Santa
Cruz Mountains red- Bordeaux style varieties capture the essence
of the mountainous winegrowing region. The shallow, rocky soils
and pronounced exposure to the sun result in smaller berries
with thicker skins and darker colors. It is the unique mountain
terroir that ascribes deep varietal intensity and greater aging
potential to these Byington wines. Byington Alliage, an amalgam
of Sonoma County Bordeaux grapes, builds on Old-World viticultural
practices, combining them with a stylistic flexibility enabled
